During the winter months we are still busy drying thousands of chillies so that you can still enjoy our chillies out of season.
We have planted some great drying chillies such as Joe's Long Cayenne, Thai Hot, and Super Chillies
There are a number of ways to use dried chillies. One method is to just crush the dried pod straight into the cooking, or they can be soaked in hot water for 20 min's then use.
The taste of dried chillies is very different to fresh, they take on a whole new flavour and really add a new dimension to cooking
The product is made from drying poblano chile peppers. Ancho has a mild paprika flavour, with sweet to moderate heat. The Ancho Chile together with the Mulato and Pasilla chiles form the "holy trinity" of chiles used to prepare mole sauces. Ancho is used to add flavour, heat, and colour to sauces and moles

Dried whole red chillies, picked and then dried for maximum freshness. Chillies kept in their whole form hold more of their flavours. If you want to crush them then do it just before you are going to use them for maximum flavour. Dried chillies can be kept a long time if stored in an airtight container
